Wild Turkey Sausage

wild turkey sausage.....25lb batch...i use the tighs & breast...20lbs of turkey meat 5lb of pork or beef fat ...i like the pork better....then your favorite sausage seasoning....mix the meat and season before you grind it then i cup of water or wine then hand mix , stuff in links or leave bulk then cook some  to taste...heres a pic the dark link is italain venison with wild leeks & red wine and turkey is maple saugar breakfast...

Nothing beats homemade sausage. It's tasty and there's always plenty to eat.

One thing I do different is season the meat after I grind it. Then it's into the casings.
