Here's my first attempt at deep fried turkey chunks: I cut the turkey breast and thighs into 1" turkey chunks. Then I mixes some eggs with milk. I also mixed some seasoning into a cup of flour. I dipped the chunks into the eggs, and then dredged them through the seasoning and flour. (I used Old Bay seasoning plus another seasoning that I don't remember the name of -- it's what we had on hand.)
Then into the fryer it went. I probably used a little too much seasoning because most pieces were on the salty side. Be careful because no matter how much seasoning you put into the flour, it doesn't look like there's much there.
Very good eating -- as good as turkey gets, and extremely tender.
