My grandma used to make turkey croquettes with the left-over thanksgiving turkey and that was a real treat when we were growing up! We didn't know anything about wild turkeys back then. I talked my mom into making turkey croquettes out of my wild turkey several years ago and it was awesome!!! The following is the recipe from my Grandma -- recipe card is dated 1969!
[Wild] Turkey Croquettes
1/2 med onion saute in 1/4 lb butter
1 cup flour
1 1/2 tsp salt
1/4 tsp pepper
3 cups milk
Cook above ingredients until very thick and then add
5 cups [wild] turkey white meat cut fine
mix well and chill
form into hay-stack shaped balls (2" base x 2" high) - makes 36 croquettes
saltine crackers finely ground into crumbs (start with 1 sleeve - add accordingly)
3 eggs and a little water (beat eggs/water in a separate bowl
Put chilled croquette in egg and then roll in cracker crumbs (set aside until all croquettes are coated)
Deep fry in Crisco Oil until golden brown
My mouth is watering right now just thinking about them!!!
