Gotta give credit for this one to Kris Winkelman (Babe's wife) for sharing it back in Sept 2002 on a TV program. She made it with Pheasant and called it Pheasant Tortilla Soup, but I've changed the meat and the name. The other ingredients are the same. And this one, as Kris said when she made it, is "Absolutely out of this World!" I've made it several times with Wild Turkey and even canned a couple of the batches and it is awesome!!!
Wild Turkey Soup
3 TBSP butter (oliver oil is a good substitute)
1 lg onion (chopped)
2 cloves garlic (minced)
1 cup turkey broth
1 cup beef broth
14 1/2 oz can tomato with green chili
14 1/2 oz can tomato with jalapeno
2 1/2 tsp cumin
2 tsp chili powder
1 tsp hot sauce
1 tsp garlic salt
3 cups cooked diced turkey
1-2 cans black beans (drained)
Brown/saute' onion and garlic in butter until soft. Set aside.
In large kettle, add ALL ingredients. Simmer 30 minutes.
Garnish with Tortilla chips (Not really sure about the garnish, but I have crumbled some tortilla chips and put on top of my bowl of soup instead of crackers and it is really good!)
(D2's note: I've substituted equivalent amounts of fresh garden tomatoes, jalapenos and green chilis for the canned ingredients with excellent results)
