A friend of mine shared this recipe with me, and I thought I would pass it along. Quite simple but excellent at the same time.
Take a raw turkey breast, and remove as much silver & gristle as you possibly can. Cut in approximately 1" cubes, and marinate in Italian Dressing for approximately 24 hours.
Take 1 lb of un-cooked bacon, and cut in 1/2. Remove the turkey chunks from the marinade, and wrap each in 1/2 slice of bacon. and secure with a wooden toothpick (non-frilled). It works out that you will have exactly the same number of turkey cubes & bacon slices, give or take 2 or 3.
Fire up the BBQ grill, and place the bacon-wrapped turkey pieces on medium heat. Cook about 10 minutes, turn, and cook another 10 minutes or so; try not to burn the bacon & overcook the turkey meat.
Serve with a dipping sauce. I tried melted garlic/lemon butter with a healthy amount of Crystal hot sauce added, I might add some cilantro next time. Or maybe try ranch dressing or Blue Cheese dressing.
