shot gun patterning

i want to pattern my shot gun and which way should i do it use a turkey head target or a big sheet of paperr

Both.
 
Shoot big paper, if you are off a bit on a shot you won't waste a shell...and your shoulder. You can still see your whole pattern and also make correction in your sights if needed.
 
Its not a bad idea to shoot at a turkey target though, so tape it to the big sheet..
